i’ve cried and laughed and talked and vented and ruminated over a big bowl of my mom’s shrimp scampi while sitting at her dining table with her for what feels like over a thousand times. it’s a dish my mom has made for me that has carried me through good times and hard times. it just feels like love.
what you’ll need:
3-4 tbs mama teav’s hot garlic oil (i use their original heat but they also have a mild version)
4 cloves of garlic, finely chopped
1 lb of linguini (or any other long pasta)
1 lb of shrimp
1/4 cup of salted butter
1/2 cup of dry white wine
1 cup of freshly grated parmesan
1/3 cup of finely chopped flat parsley
freshly cracked black pepper

how to make it:
place a large pan on medium heat. once the pan has reached temperature, add the 4 tbs of mama teav’s hot garlic oil and the freshly chopped garlic. let it sauté together until the garlic is soft and fragrant. add the 1/4 cup of butter and sauté everything together.
in a large pot, bring salted water to a boil. once the water is boiling, place the dried linguini and cook according to package directions.
add the deveined and peeled shrimp to the pan and let cook for a couple minutes before adding the white wine. let the white wine cook out before adding your cooked linguini. once the pasta is added, add a 1/4 cup of pasta water or as needed and using tongs, stir everything together.
add 1/2 cup of parmesan and the finely chopped parsley. add a couple squeezes of fresh lemon juice. season to taste.
to serve, top with an extra drizzle of mama teav’s chili oil, more parmesan, finely chopped parsley and lemon zest.
