hi, how are you, how are you doing, how are you eating, how are you sleeping, are you dreaming, have you been resting, do you feel listless, have you been writhing or thriving, are you content, are you happy, what would make you feel lighter, what would make you smile with all your teeth showing, is your heart heavy, is your chest tight, are you carrying the stress of your world on your shoulders, are you taking time for yourself, are you being thoughtful toward yourself, are you being patient, are you being kind, are you feeling considerate, don’t you know the key is trying our best to meet people where they’re at because that’s all we can do, when was the last time you wrote a love note, when was the last time you ate an ice cream cone in the sunshine, did you know healing is revenge, did you hug someone you love today, what was the last thing you ate that brought a smile to your face, when was the last time you witnessed yourself crying, are you eating well, are you okay, are you safe, are you feeling the warmth, are you feeling cared for, you know it’s okay to wallow and feel our misery sometimes right, you know it’s okay to not smile right, but do you remember it’s good to care, do you remember it’s okay to not like or love everything, you know it’s human to change our minds, do you remember that being good does not always mean being good, when was the last time you crossed your fingers for yourself and others, do you ever hold your own hand, how is your heart, when was the last time you drove with all your windows down?
i do not love making salads at home. i kind of hate it. it’s my least favorite thing to make at home for myself but these two salads are my favorite ones if i do choose to make a mess of leafy greens in the comfort of my own kitchen. one is for breakfast, the other is for any time. both can really be for breakfast if you want it to be.
a rosy pink breakfast salad using rose radicchio but you can use any radicchio. or you can use little gems, if you want. personally, i like the bitterness of radicchio and i think adding belgian endives would be a good addition.
this is a very simple salad that consists of a dressing that is olive oil, a lot of lemon juice, freshly ground black pepper, a tablespoon or two of freshly grated parmesan and a big pinch of salt, mixed well together.
fry an egg to your liking. i use avocado oil or olive oil in a pan that is heated pretty high.
place the radicchio/endives on a plate, dress the leaves with the dressing, add the fried egg, a generous sprinkling of finely chopped chives, more freshly grated parmesan, flaky salt, some crushed pistachios if your heart calls for it and enjoy it with toasted crusty bread.
this is probably one of the best salads i’ve made in a long time. it’s sweet but not too sweet, it’s summery, it’s savory, it’s refreshing, it’s bright. this would have been more perfect with some grapefruit and orange segments. something to think about.
the dressing is a beet vinaigrette made with finely shredded roasted beets, olive oil, champagne vinegar (to taste), lemon juice (to taste), honey (to taste), freshly cracked black pepper, salt. i soaked the little gem lettuce in an ice bath for 20 minutes beforehand so the leaves are a bit more crisp and alive.
i add shredded chicken to this salad and i use rotisserie chicken because sometimes making a salad feels like so much work in itself so i shamelessly take shortcuts where and if i can, finely shaved fennel, more roasted beet slices, dill / mint / chervil / fennel fronds, sliced avocado, thinly sliced kumquat. like i mentioned, this would be so good with some segmented grapefruit or orange. i also think this would be very good with some feta or goat cheese. but it’s so good as is.
i know my dressings don’t consist of measurements and i’m sorry about that. i think dressings are one of those things that are so specific to people’s tastes and palettes so please have fun with it! add more honey, add more vinegar, add less of everything. adjust it to your taste. you are the most important person, after all.
